- In a small bowl, beat egg white till foamy. Gradually beat in sugar, and hold beating until thick and glossy; set apart.
- Whip cream in a big bowl. Carefully fold in sherry, almond extract, macaroon crumbs, floor almonds, and chopped red and inexperienced cherries. Gently fold egg white into cream combination.
